Spicy Mexican Baked Egg Rice Bowl
A low-carb, spicy, and romantic lunch perfect for two!
Ingredients
- 1/2 cup cooked cauliflower rice
- 2 large eggs
- 1/4 cup diced tomatoes
- 1/4 cup chopped bell peppers (red or green)
- 1/2 teaspoon chili powder
- 1/4 teaspoon cumin
- 1/4 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the cooked cauliflower rice, diced tomatoes, chopped bell peppers, chili powder, cumin, smoked paprika, salt, and pepper. Mix well.
- Spread the vegetable and rice mixture evenly in a small baking dish.
- Make two small wells in the mixture and crack an egg into each well.
- Drizzle olive oil over the top and season with a little extra salt and pepper if desired.
- Bake in the preheated oven for 15-20 minutes, or until the eggs are set to your liking.
- Remove from the oven and let cool slightly before garnishing with fresh cilantro.
