Spicy Mexican Baked Egg Rice Bowl

A low-carb, spicy, and romantic lunch perfect for two!

Ingredients

  • 1/2 cup cooked cauliflower rice
  • 2 large eggs
  • 1/4 cup diced tomatoes
  • 1/4 cup chopped bell peppers (red or green)
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the cooked cauliflower rice, diced tomatoes, chopped bell peppers, chili powder, cumin, smoked paprika, salt, and pepper. Mix well.
  3. Spread the vegetable and rice mixture evenly in a small baking dish.
  4. Make two small wells in the mixture and crack an egg into each well.
  5. Drizzle olive oil over the top and season with a little extra salt and pepper if desired.
  6. Bake in the preheated oven for 15-20 minutes, or until the eggs are set to your liking.
  7. Remove from the oven and let cool slightly before garnishing with fresh cilantro.
