Savory Beef and Potato Stew

Ingredients
- 2 lbs beef, cut into cubes
- 4 large potatoes, peeled and diced
- Salt, to taste
- Pepper, to taste
- Water or beef broth, as needed
Instructions
- In a large pot, heat a little oil over medium-high heat. Add the beef cubes and season with salt and pepper. Brown the beef on all sides.
- Once the beef is browned, add enough water or beef broth to cover the meat. Bring to a boil, then reduce the heat to low.
- Cover the pot and let the beef simmer for about 1 hour, or until it is tender.
- Add the diced potatoes to the pot, stirring to combine. Add more water or broth if needed to ensure the potatoes are covered.
- Continue to simmer for another 30-40 minutes, or until the potatoes are fork-tender.
- Taste and adjust seasoning with more salt and pepper, if desired.
