  • 4 large potatoes, peeled and diced

  • Pepper, to taste
  • Water or beef broth, as needed

Instructions

  1. In a large pot, heat a little oil over medium-high heat. Add the beef cubes and season with salt and pepper. Brown the beef on all sides.
  2. Once the beef is browned, add enough water or beef broth to cover the meat. Bring to a boil, then reduce the heat to low.
  3. Cover the pot and let the beef simmer for about 1 hour, or until it is tender.
  4. Add the diced potatoes to the pot, stirring to combine. Add more water or broth if needed to ensure the potatoes are covered.
  5. Continue to simmer for another 30-40 minutes, or until the potatoes are fork-tender.
  6. Taste and adjust seasoning with more salt and pepper, if desired.
